Tomato juice pickle






 

Ingredients:

1. Tomato 7 pound

2. Cauliflower 1 bunch

3. Carrots 4 long

4. Celery 1 bunch

5. Garlic 1 bunch

6. Hot Green pepper 2-6

7. Vinegar 3 cups

8. Salt 3Tbsp

9. Turmeric 1 Tsp

10. Cumin 1Tsp

11. Coriander 1 Tsp



Description:

Cut the vegetables in small Pieces, wash them and spread them over a cotton cloth over night to became completely dry.   

Cut tomatoes put them on a pot on stove and let them boil until you are able to separate skin. let get a little cool, using a colander separate tomato seed and skin. Boil tomato juice for 20 min. Add vinegar and boil for another 15 minutes. Add salt, turmeric, cumin and coriander and turn the heat off. 

Add vegetables to just after it get a bit cool. Do not add al the ingredient at once or you may need to mace some more tomato juice. pour them in clean dry glass container, close the lid. let them stay for 24 hours out then put them in fridge. they will be ready in 1-2 week.

Chicken Curry





Ingredients

 1. Chicken thigh (bonless)   8 pieces

2. Onion   1 medium 

3. Bell pepper 1 or 5 Mini pepper

4. Tomato 2 medium

5. carrot 1 large

6. Potato 3 medium

7. Curry powder 3 Tbsp

8. Red pepper flake 

9. black or white pepper 1/2 tsp

10. Salt 1 tsp

11. Oil ( I use olive oir fo baking and frying you can use any vegtable oil)

12. Lemmon juice 2 Tbsp

13. Garlic powder 1 tsp

14. Cumin 1 tsp

Instruction

Chop chicken thigh and try to seperat the fat attached to them as much as possible. Put the in a bowl and add 2 Tbsp oil 2 Tbsp of curry powder and pinch of salt and mix. Cover and let it marinate for 1-2 hours. You may put them in fridge. Chop Onion, carrot, tomatos, and pepper in small cubes. Pill potatoes and chop them in medium cubes.

Add 2 Tbsp of oil to a nonstick pan and let it get hot for 30 to 45 sec. Add the chicken th the pan, saute chicken until their color change. make a whole between chicken in the middle of the pan add all chopped vegtables except potato. Add the rest of curry, black papper, red pepper flakes, garlic powder, cumin and some salt mix well and cover the pan, let it cook for 20 min. Add patatoes and cover and let it be on medium heat until potatoes cooked. add the end add lemon juice and turn off the heat. I don't add any water to the dish but if you feel it is burning you may add a few Tbsp of  water.

This dish will be good with or without rice
